Similar to kitchen countertops, desktops and workspaces require a sensible mix of durability and appearance. However, the mix shifts a bit towards durability and appearance becomes secondary, although it's still important. We have some nice choices for these applications including Maple, Ash, Hickory, White Oak and Red Oak. Wide plank countertops are a little more popular for this use but butcher block countertops easily get the job done as well.
